ENVY? APPLE CINNAMON MARSHMALLOWS
Serves Approximately 24 1 inch marshmallows
2 Envy apples, very small diced
4 T butter
4 T ground cinnamon
3 packages of unflavored gelatin
1 cup water
1 ? cup sugar
1 cup light corn syrup
1 T vanilla extract
*need a candy thermometer
Melt 4 T butter in a large saute pan over medium heat, add apples and saute until tender. Stir in ground cinnamon until the apples are well coated. Remove the apples onto a large plate and allow to cool.
In an electric stand mixer bowl, add the gelatin and ? cup of cold water. Allow to sit while preparing the rest of the ingredients.
In a small/medium pot, add ? cup water, 1 ? cups sugar, and 1 cup light corn syrup. Heat over medium heat until sugar is dissolved, whisking occasionally. Turn the heat up to high, attach the candy thermometer to the pot and cook syrup until it reaches 240 degrees. Remove from heat.
Using the whisk attachment, turn the mixer on low and drizzle in hot syrup mixer until all combined. Turn the mixer up to high and whip for 15 minutes. Add vanilla and continue to whip until well incorporated.
Fold in cinnamon apples until well combined.
Dust a 9x13 pan (or smaller if you would like thicker marshmallows) with powdered sugar and then spread the mixture evenly. Dust the top with more powdered sugar and allow to sit at room temperature overnight (or until completely dried out).
Turn the pan over to release the marshmallows and cut into squares.

ROASTED ENVY? APPLE MACARONI & CHEESE
1 Envy? apple, peeled and diced
4 T butter
1 lb macaroni noodles
2 cups heavy cream
2 cups milk
4 T flour
3 cups grated sharp cheddar
1 cup grated romano
1 cup grated gruyere cheese
1 T kosher salt
1 tsp Worcestershire
For the topping:
2 T butter, melted
1 cup panko breadcrumb
Bring a large pot of salted water (should taste like the ocean) to a boil. Add noodles and cook until just tender. Drain and set aside.
In a large pot, melt 4 T butter over high heat and then saute the diced apple until caramelized and tender.
Sprinkle in flour over top of apples and stir. Cook for another minute, stirring frequently.
Whisk in the heavy cream and milk and bring to a boil, whisking frequently so the milk doesn’t burn on the bottom.
Once brought to a boil, turn down the heat to low and whisk in the cheese, salt, and Worcestershire. Continue to whisk until all of the cheese is melted thoroughly.
Carefully pour mixture into a large blender (can do in batches if your blender isn’t large enough) and blend on high until smooth.
Pour cheese sauce over top of noodles and stir. NOTE: depending on how saucy you like your mac and cheese, you may want to use about ? of the sauce at first, let it absorb, and then add more sauce if you like it extra cheesey.
Pour mac and cheese into a 9x13 pan or your desired serving dish (that is oven proof) and spread evenly.
In a medium bowl, melt 2 T butter and stir in panko bread crumbs.
Sprinkle bread crumbs over top of mac and cheese and broil until golden brown. Be careful not to burn!

Using a star shaped cookie cutter, shape slices into stars.
Microwave chocolate chunks in a small bowl for 30 seconds at a time until chocolate is melted.
Set out a long sheet of parchment paper.
